How to care for your crock
This new series of crocks are made from white stoneware clay and fired with food safe stoneware glazes. Stoneware is quite hard but still I would recommend that you compact your vegetables by hand. Crocks are made so that a normal hand should fit inside.
After you crunch the vegetables by hand, the stones should be put on top to prevent the floating of small parts. The stones are sized so they rest at or below the inside of the neck. If you end up with less vegetables, you can place a leaf across all of your vegetables before placing the stones. Another option is also to place stone (which has been cleaned either with vinegar or baked inside an oven for 5 minutes at around 200 celsius).
You can clean it with soap and hot water after use. It can also be washed in the dishwasher. Be sure that you fully dry it after that. If you store your crock befor it is fully dry, it can happen that mold will appear. If that happens, sanitize it with vinegar or baking inside the oven before fermenting.
How to ferment
When fermenting, fill the flange with salt water (which is probably a leftover from soaking the vegetables). After that, place the lid on the jar. The water moat acts as a seal. Do top up the moat if you see that the water level has dropped.
